Quantitative analysis of survey data using SPSS

I am comparing a job satisfaction survey tool and a leadership questionnaire. One has Yes, No, Uncertain answers and the other one is a 5 point Likert scale. Should I code the dichotomous data as 0,1,2 and then use ANOVA test or would there be a better test for this? Also, I have demographic multiple choice information in the survey, as well. My goal is to look for relationships/correlations in the data. I am wondering if coding the data and running a Pearson’s is the correct method or if it would be incorrect. I have attached my dataset.
